St. Patrick’s Day Treats for the Road

Don’t skip your favorite St. Patrick’s Day celebrations just because you’re traveling in your RV this year. Many St. Patty’s Day dishes and sweet treats can be prepared in the comfort and convenience of your RV. Try these two deliciously sweet Irish-themed treats to make the most of the holiday while on the road.

Irish Soda Bread Cookies

What you’ll need:

  • 2 cups all-purpose flour
  • 1/2 cup butter
  • 3/4 cups white sugar
  • 1/2 teaspoon baking soda
  • 1/2 cup dried currants
  • 1/4 teaspoon salt
  • 1 egg
  • 1/4 cup buttermilk
  • 1 teaspoon caraway seed

Baking instructions:

  1. Preheat your RV’s oven to 350 degrees.
  2. Combine all of the dry ingredients in a mixing bowl. Use a pasty blender to cut in the butter until mixture turns into a coarse meal. Stir in the currants.
  3. Mix the beaten egg into the mixture. Pour in the milk and hand mix until a soft dough is formed.
  4. Shape the dough into a ball on a floured surface and knead it lightly six times. Roll the dough until it’s 1/4-inch thick, then cut it into squares and triangles.
  5. Bake the cookies for 12 to 14 minutes or until browned.

Irish Potato Candy

What you’ll need:

  • 1/4 cup butter (softened)
  • 1/2 package cream cheese (8 ounces)
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 2 1/2 cups flaked coconut
  • 4 cups confectioners’ sugar

Preparation instructions:

  1. Beat the butter and cream cheese together in a medium bowl until smooth.
  2. Add the vanilla and confectioners’ sugar to the mixture, then mix in the coconut.
  3. Roll the batterĀ into balls, then roll in the cinnamon.
  4. Place the balls on a cookie sheet and let them cool until set. Roll in cinnamon again before serving.
