Delicious Turkey Recipes for Thanksgiving

Making the Best Turkey

Preheat the oven to 325 degrees Fahrenheit. Prep the turkey by cleaning it out and washing it. Save the neck and organs to make gravy. Place the turkey in a roasting pan. Set the turkey aside and mix up your favorite stuffing. If you use a box stuffing, use hot water, but do not cook it.

Rub the top of the turkey with butter. You’ll want to coat the entire bird. This creates the best turkey skin. Season the turkey inside and out with salt, pepper, onion powder, garlic powder, poultry seasoning and Badia redfish seasoning. Stuff the turkey with the stuffing. Cover the turkey with aluminum foil and bake according to the turkey’s weight.

Turkey Gravy

Melt 2 tablespoons of lard or bacon fat in a wide saucepan or deep-sided fry pan. Add the turkey neck and the organs. Fry them until they are cooked well. Remove neck and organs and discard. Add enough flour to the lard to make a thick roux. Stirring constantly, cook the roux until it is lightly browned. Add drippings from the turkey pan to make the gravy. Add a little at a time since you don’t want the gravy to be too thin. Season the gravy with salt and pepper.

If the gravy is too thin, you can thicken it with a mixture of 1 part cornstarch and 1 part water. Start with a tablespoon of each. If the gravy is too thick, thin it out with more turkey drippings or water.
