Christmas Dessert Recipes


If you are celebrating Christmas in your RV, it might be harder to do a lot of baking for Christmas desserts. Instead, make something different – candy and other easy desserts that you may not have thought of.

Chocolate-Peppermint Bark

  • 1 tsp. Butter
  • 3 11.5-ounce packages milk chocolate morsels
  • 12 cream-and-mint filled chocolate sandwich cookies
  • 1 cup small pretzel sticks
  • 1 ¼ cups soft peppermint candies, coarsely chopped and divided


Break the sandwich cookies into pieces. Line a 15-inch by 10-inch jell roll pan with parchment paper. Grease the paper with butter.

Microwave the chocolate in a large bowl on high for 1 to 2 minutes, stirring at 45-second intervals. Make sure all of the chocolate is melted. Stir in the cookies, pretzels and ¾ cup of the coarsely chopped candies gradually. Spread the mixture in the pan. Sprinkle the other half-cup of coarsely chopped peppermint candy over the top. Let the candy set until it’s firm, about 6 hours. Break it into pieces. Store in a cool dry place for up to three days.

Citrus Mints

  • 4 ounces of cream cheese
  • 2 tablespoons of butter
  • 1 pound of powdered sugar
  • ¼ teaspoon peppermint extract
  • ½ teaspoon lime zest
  • ½ teaspoon lemon zest


Heat the butter and sugar in a saucepan over low heat. Stir the mixture constantly until it is smooth. Remove from the heat. Gradually add the powdered sugar, stirring the mixture to blend it together. Stir in the extract, lime zest and lemon zest. Divide the mixture into eight portions and roll each into a 12-inch rope. Cut each rope into ½-inch pieces. Let the candy set for 4 hours.
